The Fitzroy Laboratorio is a sleek stainless-steel space dedicated to creativity and craft. Different in look and feel to our other stores, it’s a concept kitchen where every flavour begins. Here, our Founder Lisa Valmorbida and our head chef dream up unique ingredient combinations using only the best seasonal produce.

This is where tradition meets experimentation. The team develops new flavours, tests unexpected pairings, and explores ideas that may (or may not!) find their way onto menus across all our stores.

If you wander past our big glass windows, you’ll see fresh fruit displays — the same fruit that goes into our gelato — and chefs at work in the open kitchen. From cookies and brownies to curds and jams, every addition you find in our gelato is handmade on-site.

The Laboratorio also houses our temperature-controlled chocolate room, where cacao from the Dominican Republic is roasted, ground and tempered to perfection. Our master chocolatiers craft every bar from scratch, while our pastry chefs create the most marvellous gelato cakes in Melbourne.

Watch the action unfold inside our glass-walled kitchen, browse the retail space for cookbooks and merch, attend our workshops and classes, or simply drop in for a scoop of something new. With a monthly rotating menu, there’s always something new.
